I would post this on the WoodenBoat forum, those guys can give you a more hands-on answer to your question. I have only used 1/8 to rebuild a 14 foot sailfish, no fiberglass just primed and painted. I've also used 1/4 on a pram. I think that the real answer to which thickness would suit you best depends on many factors.
