SOF-first Tom Yost build

Hello this is my first post, nice to be here!

I'm about to start building my first kayak and have decided to build one of Tom Yost's kayaks. I'm very curious about the Cape Falcon F1 as well but it's a bit pricey for a first build (mandatory class, plans, and supplies). My question is which Yost kayak would be appropriate for me or which is highly recommended.

Specs: 5'7", 165lbs, size 9.5 shoes

I'll mostly be using this for exercise on Minnesota lakes/rivers, possibly learning how to roll, and maybe small camping trips--I suppose just an all around kayak.

I'm currently looking at:

Sea Ranger ST since it holds a bit more storage than the original sea ranger

Sea Rider since it just looks awesome, has great reviews, nimble, quick, etc.

Sea Tour 15R since it can hold more gear and is shorter (easier to throw on top of my short hatchback?)

Also I'm thinking of using Polyester and coating it with:

Varathane Exterior Oil-based Spar Urethane, or Rustoleum Marine Coating Spar Varnish. Has anyone used these and can one mix rare earth pigments with these?

Any feedback would be greatly appreciated!
