Pete,

Check out Fundamentals of Kayak Navigation by David Burch.

On page 122 of the second edition there is a section on Finding Distance Off. On page 128 there is a simple device that you can make to measure vertical and horizontal angles. The equations are there too.

When I built mine I put the equations right on the ruler with one of those labelling machines. (They are waterproof.) I haven't used mine kayaking yet but have used it while hiking.

Get the book though, as there are lots of other great ideas in it.
