As mentioned at one of the Links Ed posted, Mistaken identity was the leading cause of actual shark attacks [on people in general not kayakers specificaly]. I saw something a little more revealing on TV about attacks. Apparently, in those cases, The Sharks werent really looking to kill the victim. Infact after thye first bite, they apparently often lose interest. The theory is that there isnt enough body fat on a human to really wet a white sharks appetite - as opposed to a seal or whale. Hence the chomp and run attacks. Converesly tho, a scuba diver off australia on his honeymoon was so badly eaten by a white shark [this one thought he was fat enough?] that they found his SHOULDER washed up on a beach.
I'll make a guess that in a "closed" kayak one fares a far better chance of survival . Scraping its teeth across the hull might be all it needs to move onto another "canidate" meal. Also, if infact the shark does grab and toss, atleast your more secured to the craft unlike the unfortunate victims of the open kayak as mentioned at the link Ed posted.
This is all conjecture, but it makes for interesting contimplation.
