OK, it's been a week and no one has responded. I will be the first to hint that this trip may not be such a good idea; not so bad as Into the Wild, but a trip that will require substantial preparation and more time in a kayak. The last place I would like to be during hurricane season is on the South Atlantic coast, trying to do a surf landing in a borrowed kayak loaded with supplies, and with one hatch open for a dog. I strongly recommend that you practice this before embarking on your trip. Many dogs like travelling in a kayak (I think that Nick has a picture somewhere of his dog enjoying the ride), but sitting in a kayak is very different than hiking on a trail, I would be sure that your dog has the temperment for this activity.
Given the time of year, and the fact that hurricanes can create a significant swell hundreds of miles away, the one key piece of equipment that you should have is a VHF Marine radio.
Good luck. I don't mean to be discouraging, and this is quite an adventure, but just be sure that you are prepared for it. Your outdoor skills will serve you well, but you should also spend more time in a sea kayak.
