I don't see packing a kayak as being that hard. There is much more room in the average kayak than a backpack. The only problem may be getting the bag through the hatch. This can often be resolved by packing the sleeping bag into the stuff sack while the sack is already in the boat. Maybe not ideal, but it does let you use a sleeping bag that may be bigger than a down one.
Since there is a way to get a large bag into a small, but no way to make a wet down bag warm, I recommend synthetic.
Having a warm sleeping bag may mean the difference between severe hypothermia and a merely uncomfortable situation. I'll take safety over convenience.
