Rob,
Some of the plans have full size drawings that you just tape together and transfer to the plywood. Mine from Shearwater Boats did and it made drawing out the panels a snap.
Grant summed the process up very nicely...building a kayak is just a series of simple steps that results in a wonderful creation as each step is finished.
After each step that I thought might be a challenge, I've kind of sat back afterwards and thought to myself "Gee that wasn't very difficult at all". Very few tools are required and the results are, as you already know, wonderful.Good luck with whatever you decide. Feel free to email me if you have any other questions.
