You're correct in realizing that if rolling takes a lot of muscle something is not right. It would be next to impossible to try and offer advise on your rolling technique after only reading about your experience.
However, you are on to some of the right things to think about. Rolling with a paddle float is a good confidence builder. It also helps to keep reminding yourself to keep your head in the water.
You would be much better off practicing with someone else. Even if they have no rolling experience they can watch what you are doing and offer an Eskimo bow rescue if you fail. An assistant who has some rolling experience will be an even greater asset in your efforts.
I found that the video "Grace Under Pressure" to be of great assistance in learning to roll. Many people find that they can spend more time under water and concentrate more on learning a new skill if they use a nose clip and/or swim goggles.
