Pete: Never tried that area - so far only around Wellfleet - harbor & ponds (ponds are tough to access if you don't have a resident/renter parking sticker).
I did find a book that describes lots of paddling trips around Cape Cod:
Adventure Kayaking : Trips on Cape Cod : Includes Cape Cod National Seashore
by David WeintraubAmazon lists it on backorder now - but you might be able to find it at a bookstore. This book has very good descriptions of lots of paddling places on the cape - conditions & launch locations. I think it did have some entries for Eastham & Chatham.
Another spot that I was meaning to try (but never got around to) is in the Truro Harbor - paddling around the harbor & exploring the Pamet river. Access is pretty easy (I think there might be a $5 parking fee).
