I know nothing about the Gudena river in Denmark, but for inland waterways in the Netherlands I recommend the Friesland, Groningen, Overijssel area. This is in the north-eastern part of the Netherlands. You can choose both lakes and smaller canals. There are also a lot of small campingsites close to the water.

All the rivers in the Netherlands have a lot of commercial traffic, I do not recommend those for the inexperienced paddler.
