Ben,
I've been thinking of installing recessed fittings in my kayak. I can't for the life of me find the link I'm thinking of, but somebody (from Germany, I think) had a nice design where you drill two closely-spaced holes, and thread in a piece of vinyl tubing with rope inside the tubing to keep the walls from collapsing. You glass this from the inside and pull the rope and tubing out post-cure.
With a wad of glass inside the loop of tubing, it should be tougher than the recessed fittings that are made from a plug of wood with a brass/SS/wood rod.
