I have experienced exactly the same symptoms from the same activity (on a calm, cold lake near us). The lake is our make-believe sea, Flathead Lake, in western Montana. Kids who learn to swim in this lake find the cold water temp a powerful motivator to learning quickly ... the sooner you learn to swim, the sooner you get to get out of the lake and stop shivering.
Our local sports medicine specialist also happens to be a fellow kayaker. He explained to me that taking cold water into the ear canal is a sure-fire prescription for nausea, dizzines, and disorientation. For my physiology, the upside-down position helps water deep into the ear canal, all the way to the ear drum. I have since practiced wet exits, roll instruction, and self rescues using ear plugs and have had no further problems (except for not yet mastering a consistent roll!)
