John, you are absolutely right! Strong winds will always want to turn you sideways to them. Encounters like this mean using paddles strokes and body/boat techniques to help (and this is relative!) stay the course. At the top of the wave usually the boat is mostly out of the water compared to in the trough where both the bow and stern are awash. At the top is the time to try and execute a turn as difficult as it might be. With the two ends of your boat free of the water sweep strokes, bow rudders, edging, and boat rocker are most effective. But this is relative to the boat you are in and personal skill level relative to the sea state. These manoeuvres might be challenging even at the best of times, certainly more so wind conditions are deteriorating.
If you are running from the wind, the waves are breaking and you begin to surf (either intentionally or not), a whole new set of rules applies!
