Congratulations on the paddle. Now comes the tough part, waiting for the water to thaw so you can use it!

I'm happy to hear that you tried a draw knife. I found that it didn't take me long to master one, and they are amazingly versatile. Not only can you split off huge chunks of wood or hog large chips but with practice and a skewed cut you can also peel off paper thin shavings.
