You can find leather strops at most workworking stores such as Woodcrafters or from catalogs such as Veritas and Highland Hardware (you can find these merchants on the web). Or, you can just glue a long, wide strip of leather to a wood backing. I use a honing compound but some just use the leather as-is. You can also strop on a block of wood charged with honing compound. Yes, you trail the blade (chisel, knife, plane blade, etc) on the leather so it doesn't dig into the strop. Just like sharpening a micro-bevel, I first get the bevel of the tool flat on the strop and lift very slightly. Once done, turn the tool over to the back (for single edge tools like a chisel, plane) and keeping the back FLAT on the stone, perform a few strokes to remove any microscopic "wire-edge".
Waterstones usually have the grit size printed on them. You may have a set of "oilstones", commonly used with mineral oil, rather than water, during sharpening. Waterstones cut faster but require frequent flattening as compared to oilstones. The "Complete Guide to Sharpening" by Leonard Lee is a great book that will remove any confusion.
