less than one minute...

If you miss your roll and are paddling with a partner, you should be able to do a bow pullup or side-by-side pullup without exiting your boat if the two of you have thot ahead. 10-25 seconds upside down and no leaving the boat.
If you bail out, you should have your torso out of the water and on the overturned boat withing 10 seconds. Put the float on the paddle while you are NOT in the water, put the paddle under your bungees, then slide off and flip the boat and paddle and get back out of the water onto the boat for reentry. Maybe another 10-20 seconds with your torso immersed.
Even if you're slow, your total immersion time should be less than a minute. In water less than 50 degrees it is recommended to maneuver around a boat rather than dunk your head a second time to switch sides if you want. There is so much head loss out of a wet unprotected head. So unless your reentry and roll is absolutely bombproof, it is best not to resubmerge the head in cold water but to reenter the boat another way.
Even our summer water ranges from the mid-thirties to fifty degrees. Cold water does not allow you much time bfore you lose movement.
