Why not practice rolling your kayak with a full load, including deck bags? The extra weight of the gear is usually not much of a problem but buoyant deck loads can prevent the kayak from capsizing completely. If you practice this, it will prevent confusion, and you can simply scull or brace back upright on the side that is "hung-up". If the lack of a full capsize confuses you then I recommend first trying your favorite roll on your on-side and if it fails, then try on your off-side.
With a fully loaded touring kayak with a deck load I use an extended paddle sweep roll (with my Greenland paddle) for a slow, strong roll. You need to give a heavily laden kayak a little more time to get moving. Some folks have problems with windowshading, that is, they get all that mass moving, roll up, and go over on the other side. As an excellent practice for this in an unloaded kayak have one friend hang onto your bow and another onto the stern and roll up. This is another one of those "tricks" that has real-world benefits.
