I am of a different school of thought on this issue. I belive that by learning as many different rolls as possible you develop an understanding of the process that transends the particular roll that you use most often. In plain english, every new skill becomes another tool for you to use when the sh*t really hits the fan.
How many of us thought that one good roll on one side was all we would ever need bacause we're seakayakers and not WW guys? I certainly did, right up until the time I capsized during an assisted rescue with the other boat and victim on the only side that I could roll on. Needless to say, I performed a lovely wet exit and realized then and there that one side was not going to be enough for me.
So I went back to the pool and practices until I had an off side roll. Then I practiced that until it was better than my on-side roll. Later I started learning other rolls partially because I like to learn new stuff and partially because I just like to roll and never, ever, ever want to swim if I could have rolled instead. First it was the Styer and the reverse screw, then the C to C, then the back-hand roll. The list goes on and on. What all these tricks have taught me is body position and control to roll whenever and however I find my self upset. So much so that now I don't capsize accidently. My high brace is finally working from all four quadrants. My rolling response is instinctive enough now that once I get beyond the point of no return balance-wise, I just start a roll without the set-up, often before my head hits the water from whatever position I find myself in. You're right, thats not a roll at all. But I don't believe that I ever would have learned such variation in my high braces if I had not first learned all of those different rolls.
When you are first starting to roll, by all means concentrate on developing one good roll before you mess with success. But don't ever think that additional knowledge or skill could somehow hurt you.
Have fun, challenge yourself to learn ever roll that you can.
