I have the full gore-tex suit by Kokatat, and really love it. Absolutely no leakage, and the freedom of a jump-suit design. You slip it on, and know that you are well-protected, and will stay dry and comfortable.
The two piece would probably work OK, but I think it is a rather make-shift solution--getting the two pieces rolled together properly looks difficult and may not even be possible for one person. Also, the rolled seam may be uncomfortable. (But I must admit, I have never used this combination)
Would you use the two pieces separately? If you don't need full immersion protection, then a paddling jacket with a venting neck would be a lot more comfortable (compared to the drytop). When would you use the pants alone? If I'm not using the drysuit, then it is either neoprene shorts, or swim trunks, depending on water temperature and the type of paddling that is planned.
So you may save a few bucks, but if it is serious protection you are after, I think in the long run you will be happier with the full suit (with a relief zipper!!--which is something else that the two piece may not adequately address??).
