I'd like to thank everyone for the articulate responses to my question,it certainly helps to have such a guideline when planning tours with my friends.
I recently read "Paddle to the Arctic" by Don Starkell where he tells the story of his 3000 mile kayak trip across the top of Canada.He kept accurate logs of each day,elapsed time,daily GPS readings and calculated his Mph each day and he said he averaged 5 miles per hour ,sometimes 4.6 sometimes 5.2 in fairly calm conditions.I thought this was a bit optimistic for my calculations but I'm sure Don was a very strong paddler and didn't have anything else to do but pour the coals to his twin armstrong engines.I think 3 mph is a reasonable guestimate for my crew.
