Read David Burch's "Fundamentals of Kayak Navigation". It's definitely the best book out there on the subject of trip planning.
You've already heard a lot of good advice from the other folks, so I won't reiterate that. 3 knots if you've got a good group. If you have stragglers, get used to a slower pace, or don't invite them next time. It may sound brutal, but you can't safely plan to paddle faster than they will actually paddle. They're best left at home if stricter schedules are to be met.
That said, the best schedules have plenty of contingency time to cope with the unknown variables that inevitably pop up.
