You are of course correct that there is no reason in principle why a sit-on kayak could not be made with the same hull shape as a sit-in kayak, and would presumably be just as fast in conditions where the wind and wash on the open cockpit were not a big factor. Since your original post seemed to be suggesting using a sit-on-top as a substitute for a "regular" sea kayak, I had the "touring" type of SOT in mind when I said they were slower. All of the touring SOT's I have seen have a "sponson" shape hull for stability that makes them wider and draggier. Maybe there are sleeker touring SOT's out there that I am unaware of, but even so I would think that the extra wind and wave exposure, higher center of gravity, and (probably) extra weight would make them a poor choice for the gnarliest trips.
