You are noticing things now as a result of your increased experience. It isn't so much an issue with rolling, as you simply adapt to each kayak, but certainly a layed back sweep is harder to do. Some seem to think that leaning back is taboo for some reason, but there are many maneuvers other than rolling that require this ability. Paddling is dynamic, and anything that restricts your movement is not so good. For rolling you'll tend to snap quickly in more of a C to C style with these high seat backs. I think high seat backs are what the market demands, as beginners seem to think they offer more support. Try using any one of a number of aftermarket back bands. High volume kayaks with high rear decks are harder to fit for performance for obvious reasons, but they have their benefits too. With your rolls Don, try varying your sweep vs snap. For example, try one where you sweep all the way aft with paddle on surface, coming up fully leaning back. Then try sweeping only 20 degrees or so then snapping. I think you'll find that both styles are good provided you keep the head in the water and protect the shoulder. By mixing things up I think you'll find yourself flexible and easily adaptable to different kayaks. Keep us posted.
