I totally agree. I wish there was an easy way to change people's attitudes before something like that happens.

It's not entirely the school's fault--I think most people want to get in a kayak and go see whales, seals, dolphins, etc. and don't realize how important skills development is. There are schools like George's that have a reputation for pushing the student right to the edge of their abilities in a safe setting. I think lots of schools cater to people's fear of going "too far" and subsequently don't push them far enough. I'd personally rather be drilled in class and then never see anything tougher in actual conditions.

People just don't realize how nasty the sea can become. They're far better off seeking instruction in a difficult setting so they can be competent if a difficult situation unexpectedly arises.
