Legally speaking, most states don't allow hunting within 500 feet of water sources or roads. That said, bullets don't generally stop after 500 feet. If you're concerned, wear blaze orange colors (required almost everywhere for hunters on public lands). While the orange isn't perfect, most hunters have conditioned themselves to recognize it as another hunter and will respect that...they don't generally want to shoot you any more than you want to be shot.
Also make a lot of obviously human noise.That may interfere with your enjoyment of your paddling day but it will be the best way to keep you alive.
Don't go around wearing antlers or animal skins and moving quietly and slowly. Also don't go making duck calls or any other animal noises. (I know, these are obvious and are mostly put here as a joke, but someone will say "gee I hadn't thought of that".)
Personally, I wouldn't worry about it too much unless you routinely paddle through areas that are heavily hunted. If you do, maybe you can find some alternate paddling areas and learn to love a new place?
