I generally prefer a smooth hard seatpan. Better rotation and such, but it really depends on the seatpan.
I'd never be able to keep the a stock VCP Pintail seat in a boat I paddled much - I just don't fit. My other boat has a 1/2 or more extra space between the seatposts (makes a huge difference) and a nice simple pan design. I ditched the pad it came with and sit on the bare seatpan - and am comfortable for hours.
You can alway use foam to get the shape and them glass it if you prefer a smooth hard seat.
If you are comfortable in the stock seat - leave it! Center of gravity/balance issues disappear with a little seat time.
