A version of flag tag has worked well with both adults and kids. I'm usually teaching canoe but it would work just as well for kayaks. I set up boundaries, usually a small cove (try to have everything within a 150 foot circle). Everyone has to stay within the boundaries. A stick or a towel becomes the flag. The object is to grab it off the other boat at whcih point that person becomes the one chased. It is great for practicing turns, the area is small enough that it is not a flat out race so everyone has an equal chance and, inevitably, there is rescue practice as well. The American Canoe Association also has a book -- Kayak and Canoe Games by Laurie Gullion -- which gives several good ideas for both crafts.
