Haven't tried it, but I'm not sure I buy it just sitting here thinking about it. First, it'd have to have no bulkheads, or very widely spaced ones. The boat would have to have a lot of initial stability I think. You'd loose the ability to control the boat with your body, as you noted. A boat with that much initial stability would likely have a pretty flat bottom, increasing the chance that you might get pitched over on a wave. Body, boat, blade is how it goes I think. Of course this is all just after dinner conjecture on my part based on my relatively limited experience in sea kayaks and no other paddle boats. There are doubtless boats out there whose design would help resting low down in the boat.
I think if I were inclined to take a rest on a long crossing (not that I've ever done a really long crossing) I would think about paddle outriggers, sponsons or something along those lines. I also imagine that were I on a long crossing I'd highly likely be in the company of at least one other paddler of similar or better experience and skill, and we'd probably just raft up.
Interesting prospect, resting at sea. Not sure you have the option out there when it gets rough. But again, this was my first summer venturing into true open water conditions, so...
