Mary--
I haven't read all of the preceeding thread, but I think you are understanding how a skeg works very well. Deploying the skeg changes the underwater shape of the kayak and the point around which it wants to pivot. Wind, which causes lee and weathercocking, acts on the above water portion of the kayak and if we sum all the winds forces we can say it acts through a point called the center of pressure. When you adjust your skeg to move the underwater pivot point close to the center of pressure you feel that the kayak is more neutral, neither weather or leecocking.
For the purposes of this discussing I think you can use leecock and lee helm interchangeably.
