Pete, if you get the chance try out/rent some maneuverable kayaks,,you might be able to find a rental Wilderness Systems Tempest or Necky Chatham to find out what's possible. 18' of straight keeled kayak with a sharp bow,WR180, will do one thing well,,and it's not maintaining a course when what happens on the front of the kayak is different than what's happening on the back of the kayak.
Basically your hull is a LOT bigger than your paddle,,,you can't force that much boat with a little paddle on the end of flexible joints.
