not sure about sea kayaks, but when surfing in a river boat going diagonally accross the wave face extends the ride. the idea to keep you in the 'pocket'(near the fall-over or break), where most of the power of the wave lies.
as to broaching, have you tried using an aggressive stern rudder?
or do sea boats broach more easily than WW boats?? if i am out for a surf session i tend to take a river boat!
