I use a mid-sized Epic wing for all of my paddling now. Common wisdom is that wing length is a bit shorter than 'normal' euro paddle length, but for me it's just the opposite. I paddled a 220 touring length and settled into what I thought was 218 with the wing. However when I actually measured it, it turned out to be 5cm longer than the sticker indicated. I've tried shorter (variable length over a 10cm range), but the 223 just seems right for me most of the time. There are lots of variables on wings, but most people seem to be settling on smaller blade sizes than previously and I haven't seen any of the radical blade angles for a while. I had an older, bigger wing but it just felt awkward and I never liked it and seldom used it. Then I tried the mid-sized wing and it immediately felt quite natural. For my way of paddling and my stroke. I like the bite of the wing, but some feel that it is harder on their bodies.
I think Epic is the top of the line (although I haven't been looking around lately - there are always new products coming out), and priced accordingly. I suspect you can get something very close, if not equal, from other mfrs without the need for a second mortgage to finsnce it, but I'd recommend taking a look at the Epic website as a start. Greg has some very good information on there.
