Who trains how?

I paddle as part of a mix of self-propelled exploration that includes biking, hiking and cross-country skiing as well as some light weight work and indoor exercise machinery when weather doesn't cooperate. If I haven't been able to paddle in a few weeks I sometimes find muscle groups I haven't addressed, but nothing serious. I'm more interested in the occasional but competent paddler whose schedule doesn't seem to allow for regular conditioning of any kind. I paddle with some people like this. Sometimes their lack of fitness holds us back, other times it doesn't seem to matter as much.
Age and personal intensity figure in the mix. Has anyone observed themselves and other paddlers regarding desirable fitness levels? How do paddlers who don't want to mix other activities stay fit when circumstances keep them from the water? Is anyone able to just hop off the couch and put in a 20-mile day?
I won't taint the results with my personal conjecture about what the answers will be.
