It can and has been done, albeit not by me. I do have pictures of Jeff Schrock of Monterey Bay Kayaks using a parafoil kite to tow a loaded 16' SOTAR (raft) down the Grand Canyon though.
I would think that a kite surfing rig would be much too strong for a kayak. My understanding is that it's a bit like riding a tiger: it's the successful dismount that's the big problem. You're hitching your boat to a potentially overwhelming external force, and better have a good plan to deal with the consequences, including launch, steering, release, and recovery.
A web search should turn up some information on kayak kiting and sailing.
