Pete,
I've posted some video clips of Greenlander's performing a "standard roll" (a bow to stern extended paddle sweep with a layback) and side sculling, that may be of interest to you.
In Greenland, where a wet exit is not generally taught, a kayaker, with an instructor standing at the bow of their kayak, first learns to stay calm while capsized. The student capsizes, waits a few moments, and then the instructor rolls them back up. After this the student progresses to side sculling (which is more about finding a balance position than paddle motion). From there the student learns to roll. The URL of the clips is at http://www.qajaqusa.org/Movies/movies.html#rolling.
A Greenland technique, "the Petrussen maneuver", a method to breathe without exiting your kayak is explained at http://www.qajaqusa.org/QK/petrussen_maneuver/Petrussen_Maneuver.html. No scuba tanks required
