The foil simulator you linked to shows a foil has more lift than a flat plate of the same dimensions. It also predicts they stall at about the same angle. The higher lift of the foil would require less angle of attack to achieve the same lift and so you would be less likely to put the rudder into a stalled possition.
Interestingly, a quick check of the elliptical shape showed slightly better lift at the same dimensions.
