Klepper, Nautiraid, etc. the folding doubles are all around 17-17.5 feet and handle lots of people and gear, have one big open cockpit. My first kayak was a homemade copy of a Klepper since I couldn't afford the real thing then. It worked fine. Kleppers cost $350 at that time.
Later I have also floated many class 1 to 3- rivers as well as big ocean paddled in my real Klepper. Something along those lines in a wooden kayak may do well for you. You could modify (shorten, one bigger cockpit) some existing design also.
A two piece stich and glue double ould also be quite easy to make.
