Looking for Design

I'm new to kayaks, but have considerable experience with canoes. I'd like some help locating kayak plans (strip or S&G) designed for lakes and rivers (Onterio, N. MN & WI); which would track well yet be fairly manuverable; carry self and gear to 220#; lightweight for portaging; reasonably stable (novice user); 16' - 17' max(?); and easy to get in and out of (large cockpit 4 60yo w/ bad knee). Asking too much? Thanks
