I'm certain, the wood-and-canvas method for making a canoe could be adapted to making a kayak. Probably the main reason it hasn't been done much is because, well, that's not the way its done. But this isn't a very good reason. It should be pointed out that due to the deck on a kayak, it can be built much lighter. It does not need as heavy ribs for structural integrity.
