Shawn,
Tammy and I got interested in paddling by a gift of a free double kayak rental. I find that a lot of first timers tend to find singles too tippy, so a double is a good way to get into the sport. I also think the idea of weaker and stronger paddlers together in a double is great. The person in back needs to listen to where the person in front wants to go. They are not ideal, but they are stable and can help compensate for performance differences.
We also enjoyed paddling a double SOT in Catalina, it was about 19' x 27" and was a pleasant surprise.
I'm thinking about a double somewhere down the road, maybe a calapsable (sp?) skin on frame. moderately sized that would be good for taveling and taking beginners out in, who may find the average single too tippy.
Doubles have their place, but I don't want one as my everyday kayak.
