I am going to build a double this spring for my wife and I to paddle this summer. I will more than likely sell it next year: if she likes kayaking, I will buy/build a boat for her. If she doesn't like paddling, I've got my own singles, and I won't need a double anyway.
I think doubles are a reasonable (there are trade-offs either way) way to introduce people to the sport. They are by no means ideal, but if both paddlers are actually paddling, as Ian mentioned, they're not bad....well, they're not horrible!
Hmmm....maybe I should just skip building a double and rent one for the summer.
