The concave bow was not to get maneuverability it was for speed and seaworthiness. I don't think they desired lots of maneuverability in rough water, what they needed was to be able to go straight when things got rough, and they needed to do it fast. That is what Aleut baidarkas do best, go fast and straight in rough water. In other areas where they needed more maneuverability and less speed, they did not use a bifid bow and the built in skeg.
Look at what happened with the advent of guns to Alaska. The kayaks got shorter, with more rocker, like the surf kayaks of today. They were used primarily for retrieving game that was hunted from shore, these kayaks were used in the surf zone, funny how they are similar to our cutting edge surf kayak designs.
