Understanding the differences in design to perfor

I have been interested in building a kayak; however I am new to kayaking. I am confused as to exactly how different a boat with a raised bow with a bowed deck performs to one with a straighter bow and stern. I also am curious as to what the advantages or disadvantages are of a boat which is closer to the waterline with curved edges or rounded edges at the hull. I am personally looking for a kayak which is fast and easy to paddle, and can accomodate enough gear for a week trip.
