The "hollow" or concave section in the ends create a finer entry. This will provide somewhat higher moderate-speed efficiency, somewhat "harder" tracking, and a little bit gentler re-entry when going over waves. A fuller end will provide somewhat higher top-end efficiency, somewhat more manuverability, and a little more volume for lifting over waves.

Note the frequent use of "somewhat" - the difference is hardly noticable. The fuller section is easier to build, the hollow section is better looking in my opinion.
