What boat to build?

Hi Nick and collective, I really want to build a strip kayak to complement my CLC 17. I just ordered Nick's book, and was considering building the Guillemot, but I like the look of the hollows on the Coastal. I considered building the Expedition Single, but I don't have room in my garage for an 19' boat - maybe only an 18 footer.
What is the difference in performance between the hollows and the flatter bow/stern?
