I personally like the simplicity of kayaking. The three hulls and sail rigging seems complicated to me. Getting it to the water and back would be tough, also.

I am looking at a kite for my kayak though and have made some inquiries on them. This would be for covering large distances as quickly as possible and not so much as an end in itself.

I think your idea is doable. Probably hasn't been done with a kayak before but there are tri hulled sailboats around so you might want to start your research with them.
