Check out Heritage Sit-on-tops (www.heritagekayaks.com) for one of the better paddling designs. If you are actively paddling correctly and primarily using your back and midsection muscles rather than your arm and shoulder muscles, you are sitting up and a bit forward and not really using the backrest. A sore back, especially lower back, is indicative of incorrect forward paddling technique. Except for lunch stops, a low back rest should be better. Southwest Kayaks page has a good article on paddling form.
I'd like to work on a good sit-on-top design but the water temperatures here make it impractical.
