Sit-on-top Kayak Problems

After kayaking for some years now, I've decided due to my age, to buy a sit-on-top kayak. I intend to buy one this spring. But I have some questions that need to be answered before I buy.
I know that the best way to buy a kayak is to go to the dealers "Demo Days" and "try before I buy" which are usually held at an inlet,lake or bay.
My problem with sit on tops is this: You sit too "high", which in turn will tire a paddler quicker. Sitting "lower" makes it easier to paddle longer. Also, a back support that's "built in" (molded) to the hull will allow the paddler a strong back posture position, making paddling effortless.
Conclusion: I hope to buy a sit-on-top kayak that I can sit LOW in.I hope the seat has a HIGH, built in back support. And of course, I hope it weighs less that 50 lbs.
If anyone is familiar with a SOT kayak as mentioned above, I'd appreciate any information.
