Probably a good place to start is with a surfboard that works well and then add a place to sit/kneel.
Kayaks have taken their terminology from the boating world where surf boards probably had their terminology made up by surfers (not known for their intelligence :-).
I would think kneeling would have advantages other than being hard on the knees.
