That's pretty much how I built mine. 1/4" luan, backed butt joints, glassed both sides, alternative deck. Be carefull though. When I was all done, my boat weighed in at 70+ lbs. If I were to do it again, I'd go easier on the glassing then I did. One layer on the hull, taped inner seams, and let it go. Skip the end pours, or do them with much more control then I did (big heavy globs of epoxy there).
The hull is very strong by its stressed curves even when just stitched together as naked plywood. I verified this by dropping mine from the ceiling joists and then falling down on it off of the freezer. Nothing broke, and I simply bounced off the hull. I should have taken the hint.
A good boat. Primary stability is only so so, and is very sensitive to my leg placement. Secondary stability is superb. Manueverability isn't everything I expected, but then I put that boat into some really absurd situations in the swamps. The speed and tracking surprised me, being better then I'd expected. It is a boomy boat though, and you tend to boom because of the width. I'm forever banging my paddle against the hull, unless I feel like swaying over the boat to swing widely enough to clear the sides.
